I am taking part in the #52LittleThings challenge with AXA PPP healthcare to make small changes in my lifestyle, one week at a time to become a healthier and happier person.
This weeks challenge is all about taking the time to celebrate the humble root vegetables! … which is utterly perfect for this time of the year and also the fact I am a total veg lover!
Autumn for me is my second favourite season, with comfy fat pants to snuggle into at night with the curtains drawn and the family time in the warm … and there is nothing quite like the range of root veg that is on offer from the leek and carrot to beetroot and pumpkins.
Last year I discovered the love of homemade soups and relished being able to batch cook on mass and freeze soups into portion sizes. It helped make teatimes so much easier on those super chaotic days while trying to feed people in shifts and the after school clubs kicked in for Beth and the bathtimes and stories for Joshua.
This year I am even more excited at the prospect of seasonal root veg as I have master plans to make some Slow Roasted Winter Vegetable soup, and Leek and Sweet Potato soup for the first time too!
To top it off I am in the process of reviewing some amazing new Thermos flasks that are going to make it even easier to celebrate the humble root vegetable … here’s hoping it helps on the weight loss journey too!
