Apple and Cinnamon Cake Recipe

Blogger Guest Post - Apple and Cinnamon Cake Recipe The Oliver\\\'s Madhouse
If there is one thing I love it has to be a good flavoursome cake. At this time of year the garden has so many fresh fruits that are perfect for cakes. Today I am sharing my Apple and Cinnamon Cake recipe. This cake came along after I had a lot of wind fall apples that needed using up. My favourite apple combination has to be apple and cinnamon, they compliment each other perfectly!

Ingredients
  1. 150g butter/spread
  2. 150g caster sugar
  3. 3 eggs, at room temperature
  4. 150g self raising flour
  5. 3 tspn ground cinnamon
  6. 100g apples, chopped
  7. 100g mixed dried fruit with candied peel
  8. 1 tbsp flour
  9. Icing sugar
Instructions
  1. Pre heat the oven to 180C fan
  2. Mix together the butter/spread and caster sugar until light and creamy
  3. Mix in the eggs, one at a time, with a little flour to prevent curdling
  4. Sift in the flour and 2 teaspoons of cinnamon and mix thoroughly
  5. Coat the chopped apple with a tablespoon of flour and 1 teaspoon of cinnamon
  6. Stir in the flour coated apples and the mixed fruit
  7. Spoon the mixture into a prepared loose bottom cake tin and place in the centre of the pre heated oven
  8. Bake for 40 minutes or until a knife comes out clean when placed through the centre
  9. Leave the cake to cool for 10 minutes in the tin before removing and allowing to cool completely on a cooling rack
  10. To finish the cake dust with icing sugar

    I spent ages the other day looking for an apple cake recipe! This one only just popped up on my Bloglovin’ feed…will save it for next time 🙂
