Apple and Cinnamon Cake Recipe
2014-08-31 23:37:12

If there is one thing I love it has to be a good flavoursome cake. At this time of year the garden has so many fresh fruits that are perfect for cakes. Today I am sharing my Apple and Cinnamon Cake recipe. This cake came along after I had a lot of wind fall apples that needed using up. My favourite apple combination has to be apple and cinnamon, they compliment each other perfectly!
Ingredients
- 150g butter/spread
- 150g caster sugar
- 3 eggs, at room temperature
- 150g self raising flour
- 3 tspn ground cinnamon
- 100g apples, chopped
- 100g mixed dried fruit with candied peel
- 1 tbsp flour
- Icing sugar
Instructions
- Pre heat the oven to 180C fan
- Mix together the butter/spread and caster sugar until light and creamy
- Mix in the eggs, one at a time, with a little flour to prevent curdling
- Sift in the flour and 2 teaspoons of cinnamon and mix thoroughly
- Coat the chopped apple with a tablespoon of flour and 1 teaspoon of cinnamon
- Stir in the flour coated apples and the mixed fruit
- Spoon the mixture into a prepared loose bottom cake tin and place in the centre of the pre heated oven
- Bake for 40 minutes or until a knife comes out clean when placed through the centre
- Leave the cake to cool for 10 minutes in the tin before removing and allowing to cool completely on a cooling rack
- To finish the cake dust with icing sugar
