If you have been following me for a while, then you will be fully aware of how cooking to me was something like a nemesis. But with a plan to reign in the finances and organise the family teatimes to be more balanced, I am finally finding my cooking mojo, especially during this time when the whole family is at home.
Being more organised with meal planning and cooking meals using quality fresh ingredients has really helped save the family money, waste less food and helped me drop a few pounds while eating well for less!
This is one of the simple balanced meals that the family really enjoys!
The meat choice for this meal has been lean pork. It’s an ideal option for any balanced meal as it’s amazingly versatile. Pork is a source of vitamin B12, vitamin B6 and zinc which can help the immune system to work normally. Pork is also naturally rich in protein, low in salt and provides 10 essential vitamins and minerals that support good health and wellbeing. These are: thiamin (vitamin B1), niacin (vitamin B3), vitamins B6 and B12, riboflavin, zinc, potassium, phosphorus, selenium and pantothenic acid.
All this makes pork an ideal base for any family meal.
Sticky Glazed Pork

This is one of our family favourites. We are able to adapt it as we need to add in different vegetables that need using up, or anything you have in your cupboard, fridge or freezer.
You can even adapt the stickiness. The kids prefer it less sticky and we prefer it more sticky.
I also love this recipe because you can pretty much use any lean pork cut and cut off any little bits of fat to make it even leaner!
Preparing the recipe before it’s needed is also something you can do. So on chaotic days, you could even prep it for the following day and leave the meat marinating in the fridge.

Simple Balanced Meals: Sticky Glazed Pork
Ingredients
Method
- Pour in the mild honey, chilli flakes, hot sauce, stock cube and rice wine vinegar. Put to one side and carry on the steps. If you are prepping and not cooking straight away, you can marinade the pork in some of the juices and a bit of garlic prior to cooking but don't use all the wet ingredients as you will need this to cook the sauce later on!
- Slice up the lean pork into strips and put them into a skillet or frying pan on a medium to high height. Sprinkle the pork with the salt and black pepper and turn it frequently to ensure it is thoroughly cooked but not over cooked.
- Take the pork out and pop to one side and put into the pan the veg (in this case peas and carrots). If the veg is chunky it will take longer to cook through so make it as fine as possible before starting to cook.
- Add the garlic and ginger to the vegetables.
- Turn up the heat on the pan and put the pork back in the pan with the sauce and bring to the boil.
- You can at this point add in a little bit of water to the pan if you don't want it too sticky but remember whether you add water or not, you need to keep stirring!
- Once happy with the consistency you can then serve. We love to eat it with egg noodles (cooked in a pan with a stock cube).

I love how quickly this simple teatime meal can be made and I love that by adding rice or noodles, you can change up the meal.

This looks so yummy and I love any recipe you can prep ahead of time!

This sounds lovely Jaime! I make a similar thing with chicken — but have never tried it with pork! Will bookmark this for future mealtimes! I always love a recommendation 🙂
