If you have not read my #51LittleThings posts before I have been taking part in weekly challenges with AXA PPP healthcare to make small changes in my lifestyle one week at a time to become healthier and happier.
This week it’s all about baking a healthier treat and this make me nervous … I am no great shakes in the kitchen but in fairness finding healthier snack options are only a good thing especially since I am on a health and fitness mission.
My biggest downfall of eating healthily has been by far my snacking as its so easy to grab something full of fat and limited nutrient base such as crisps and chocolate as they are handy to have.
With that in mind I have been looking for snacks that have a better nutrient balance in to help keep my energy levels up.
So with this weeks challenge it was time to start looking at baking a healthier snack ….
There have been lots of options and ones that I have really like the sound of where Carrot Muffins and Beetroot Seed Cake, however hubster was not impressed with the sound of them so it was time to bring out the big guns and try an Apple Flapjack …
I am so pleased I baked this recipes as it was so easy to make and it tasted delicious, not only that it a great snack for a few hours before the gym with its slow release energy in the oats and then fast release with the sugar and syrup.
Now as most of my regular readers will know I am not known for my kitchen prowess so the fact I created something that was delicious and not just edible really made my day .. add into the mix its simplicity I am hoping this is going to not only be a staple it is going to be super kid friendly and the teen and toddler can do it .. maybe the teen can make it on her own.
I totally love the fact you can also add other ingredients to this recipe, such as raisins, dates or even nuts! (none of which hubster likes so I had to stick with the original recipes)
